Nobile di Montepulciano DOCG Antica Chiusina Fattoria del Cerro is a wine produced by the Tenute del Cerro group. It is made from 100% Sangiovese grapes, Prugnolo Gentile clone, cultivated in the Antica Chiusina vineyard, a very rare variety grown in central Italy, named after its characteristic violet scent. The grapes are hand-harvested around mid-September and brought to the cellar for destemming. Fermentation takes place in temperature-controlled steel vats for about 15 days at 28°C. During this period, the wine enriches with polyphenols and aromas released from the skins and seeds. After fermentation, the wine remains in contact with the skins for another 48 hours at 29°C, promoting polyphenol polymerization and thus softening the astringency. Subsequently, the wine is aged for 8 months in French oak barriques, then transferred to large barrels for an additional 4 months of aging before blending and bottling. Pairings: This wine is very elegant and structured, suitable to pair with pasta dishes with meat sauces, main courses of grilled red meats and game. It is also excellent with aged cheeses.
