The caramelized figs are made with figs from the fields adjacent to the Fatourin company, in fields that fully comply with organic regulations. The caramelized figs should not be considered as fig jam; they are caramelized over high heat in a large cauldron, just like in the old days. The Dal Fatourin farm uses only natural and unrefined products for these figs, such as cane sugar and lemon. Pairings: Caramelized figs pair perfectly with soft cheeses, both fresh and slightly aged. To enjoy them at their best, we recommend warming them slightly. Storage: Once opened, store in the refrigerator. Consume within 3 days of opening. Processing: The caramelized figs are handpicked from the plant, taking care not to damage them and to keep the pulp intact to prevent oxidation that would alter the fruit's taste. The figs are first blanched and then caramelized and cooked very slowly in a cauldron for several hours, trying to keep the fruit as intact as possible.
