Pasetti Passerina Testarossa is a wine produced with native Abruzzese Passerina grapes cultivated in vineyards that extend on a hillside facing the eastern side of the valley (southwest exposure), starting from a mirror of fresh and pure water, considered the source of the Tirino stream. It is an unspoiled environment, characterized by high brightness, low atmospheric humidity, frequent breezes, and a temperature range between day and night that during the ripening period can reach up to 20 degrees Celsius, benefiting a complete and balanced maturation with a high accumulation of aromatic precursors in the fruit. Once ripe, the Passerina grapes are brought to the winery for white vinification, cryomaceration at 4°C for 24 hours, gentle pressing, followed by refrigeration to promote decantation. Fermentation with the aid of selected yeasts at low temperature (10°C - 13°C), in steel. After fermentation, Pasetti Passerina Testarossa ages for two months on its fine lees before blending and bottling. Pairings: Pasetti Passerina Testarossa can be enjoyed with seafood cuisine, appetizers, fish soups, mollusks and crustaceans, baked fish, white meats.
