The harvest of the Glera grapes that make up Prosecco Astoria Corderie takes place manually in September/October when the grapes reach their optimal chemical and organoleptic balance. This is followed by gentle pressing and static decantation of the must. Primary fermentation occurs in steel containers at 18/19°C with selected native yeasts. The new wine is kept on the "noble lees" for one month, then clarified and transferred to autoclaves for the sparkling process. The refermentation takes place at 16/18°C, always with selected yeasts, and lasts about 25/30 days; this is followed by a few days of aging on the lees. Bottling then proceeds, followed by resting in the bottle for a few weeks. Pairings: Prosecco Corderie Astoria is a wine with perfect characteristics to be paired with aperitif snacks and accompanies meals composed of delicate dishes.
