Prosecco Docg Col Vetoraz Millesimato

The Prosecco Col Vetoraz Millesimato Dry is produced on the steep hills of the renowned Valdobbiadene area. The Glera grapes are harvested around the end of September and brought to the winery for gentle pressing. The musts are cold settled and inoculated with selected yeasts for alcoholic fermentation. This process takes place at a temperature of about 15°C for approximately 15 days, after which the wine remains in contact with the fine lees for a few months until blending. The formation of the bubbles that characterize the product occurs in steel containers called autoclaves according to the Charmat method: wines added with sugar and yeasts are transferred into these autoclaves where the sugars transform into alcohol and the bubbles, unable to escape the container, remain dissolved in the wine, making it sparkling. The bottling of Prosecco takes place under isobaric conditions to prevent the loss of bubbles, and the Prosecco is released to the market one month after bottling. The Col Vetoraz Millesimato Prosecco is produced only in the best vintages.
