Prosecco Docg Millesimato Di Cartizze Bortolomiol

Prosecco Superiore Millesimato di Cartizze Bortolomiol is a wine produced on the famous Cartizze hill in the municipality of Valdobbiadene. The hill is a very particular cru, certainly the most famous in the entire Prosecco area, featuring conditions of exposure and a soil composition particularly suited to the cultivation of Glera grapes. The Cartizze hill produces grapes that yield particularly fine wines, which are transformed into Proseccos of absolute value. The Bortolomiol winery owns vineyards on the Cartizze hill, and this is one of them. The grapes are harvested manually at the end of September and are directly taken to the winery for pressing. The musts ferment in temperature-controlled steel containers for about 20 days at a temperature of 16°C, allowing the yeasts to release their aromatic potential. The base wines remain in steel containers on their fine lees for a few months before blending and refermentation in an autoclave. This process occurs through the addition of sugars and yeasts, allowing the development of the Prosecco bubbles. The Prosecco Superiore Millesimato di Cartizze Bortolomiol is subsequently bottled isobarically and released to the market about a month after bottling. Pairings: Prosecco Superiore Millesimato di Cartizze Bortolomiol is excellent for pairing with appetizers and snacks, both seafood and land-based, perfect when paired with traditional Italian risottos or with fish dishes that are not too spicy.
