Sassicaia is probably the most famous Italian wine in the world. The Marquis Mario Incisa della Rocchetta recognized the potential of the Bolgheri territory to produce wines with the extraordinary elegance and refinement of the great Bordeaux. Bolgheri is a very special terroir due to the nature of the soils and its proximity to the sea, making it an incredible place for wine grape production. In the Bolgheri area, the international grape varieties Merlot, Cabernet Sauvignon, and Cabernet Franc are cultivated, which express themselves better here than anywhere else in Italy, giving rise to legendary wines like Sassicaia, justifying their price. The grapes are hand-harvested around the first days of September and the harvest lasts about three weeks, waiting for the right phenolic ripeness of the grapes. Once picked, the grapes are sorted on a vibrating table before being destemmed and transferred to steel vats for alcoholic fermentation, which takes about 10 days, followed by another 5-8 days of post-fermentation maceration. The polyphenols from the skins are diffused into the wine, enriching its aromatic and taste profile. After fermentation, the skins are separated from the wine, which is then transferred to French oak barriques for 24 months of aging before blending and bottling. Sassicaia rests in the cellar for 6 months before being marketed. Pairings: Sassicaia Bolgheri Tenuta San Guido is a wine of great structure, suitable to pair with meals for special occasions such as roasted red meat or game, excellent when paired with aged cheeses, or as a meditation wine accompanied by a noble Modica dark chocolate.
