
Sebastian Brut is named after the founder of Cascina Maiolo, Notary Sebastiano Maioli, remembered on the keystone of the manor house door.
The early harvest of grapes, suitable for giving the must more acidity, and careful vinification at low temperature, allows for crafting a wine with a profile suited for re-fermentation in an autoclave with aging on the lees for several months, resulting in a cuvée with great fragrance in aroma and a very delicate perlage.
Pairings: Ideal as an aperitif, with "sushi," raw meat or fish, or tasty and flavorful appetizers.
