Sessantanni Primitivo di Manduria is a wine born from the selection of the oldest vineyards (around sixty years old) of the Primitivo variety, cultivated as bush vines in specific sites within the territories of Feudi di San Marzano. These vineyards are characterized by soils rich in iron oxides and calcareous composition, which, combined with climatic conditions of good temperature variation and low rainfall, make these places perfect for the maturation of Primitivo di Manduria, which finds a masterful expression in Sessantanni Primitivo di Manduria. The grapes, in an advanced state of ripeness, are harvested manually. Maceration: 18 days on 80% of the mass, 25 days on 20% (with indigenous yeasts selected in the vineyard on chosen material of different types). Fermentation at controlled temperature at 24-26°C. The aging of Sessantanni Primitivo di Manduria takes place for 12 months in French oak barriques before blending and bottling.
