Soave Classico Calvarino by Pieropan is a high-quality white wine produced in the Veneto region, in northeastern Italy. The Soave area is characterized by volcanic hills rich in basalt and tuff, which give the wine a distinctive minerality. The Calvarino vineyards are located at an altitude of about 200-300 meters above sea level, and the vines are cultivated using the traditional Veronese pergola training system. The grapes used for this wine are mainly Garganega, a native variety of the area, accompanied by a small percentage of Trebbiano di Soave. The production process begins with the manual harvest of the grapes, usually at the end of September. After gentle pressing, the must ferments in stainless steel at controlled temperature to best preserve the primary aromas. Subsequently, the wine matures on the lees for about 12 months, gaining complexity and structure. The aging continues in the bottle for a further 6 months before being marketed. The result is an elegant and complex Soave Classico Calvarino wine, characterized by notes of yellow-fleshed fruit, white flowers, and a pleasant minerality, with remarkable freshness and persistence. This wine pairs well with fish dishes such as fish soups, shellfish, as well as first courses based on rice or pasta with light fish-based sauces. Its acidity and structure also make it an excellent companion for fresh or blue cheeses.
