Soave Classico Calvarino Pieropan

The Soave Classico Calvarino by Pieropan is a high-quality white wine produced in the Veneto region, in northeastern Italy. The Soave area is characterized by volcanic hills, rich in basalt and tuff, which give the wine a distinctive minerality. The Calvarino vineyards are located at an altitude of about 200-300 meters above sea level, and the vines are cultivated using the traditional Veronese pergola training system. The grapes used for this wine are mainly Garganega, a native variety of the area, accompanied by a small percentage of Trebbiano di Soave. The production process begins with the manual harvesting of the grapes, which generally takes place towards the end of September. After gentle pressing, the must ferments in stainless steel at a controlled temperature to best preserve the primary aromas. Subsequently, the wine matures on the lees for about 12 months, acquiring complexity and structure. The aging takes place in the bottle for an additional 6 months before being marketed. The result is an elegant and complex Soave Classico Calvarino wine, characterized by notes of yellow-fleshed fruit, white flowers, and a pleasant minerality, with remarkable freshness and persistence. This wine is suitable for pairing with fish-based dishes, such as fish soups, shellfish, but also with first courses based on rice or pasta seasoned with light fish-based sauces. Its acidity and structure also make it an excellent companion for fresh or blue cheeses. Pairings: The Soave Classico Calvarino Pieropan is a white wine of great structure and complexity, from the Veneto region. This wine pairs perfectly with fish dishes, both raw and cooked. A tuna or salmon tartare, for example, can be an excellent appetizer to pair with this wine. A sea bass or bream carpaccio can also be a great choice. As for first courses, the Soave Classico Calvarino Pieropan pairs well with seafood risottos or pasta with fish-based sauces. A shrimp risotto or pasta with clams and bottarga can be excellent choices. For main courses, this wine pairs well with fish-based dishes, such as a baked sea bass fillet or grilled swordfish. Even a mixed fried fish can be a great choice. Finally, regarding cheeses, the Soave Classico Calvarino Pieropan pairs well with fresh and medium-aged cheeses, such as buffalo mozzarella, caciocavallo, or pecorino. Always remember that food-wine pairing is very subjective and depends a lot on personal tastes. So, don't hesitate to experiment and find the pairing you like best.
