Soave DOC Monte Ceriani Tenuta Sant'Antonio is a wine produced by the Tenuta Sant'Antonio winery in the municipality of Colognola ai Colli. The grapes that make up Soave DOC Monte Ceriani Tenuta Sant'Antonio are Garganega 90% - Trebbiano Soave 5% - Chardonnay 5%. The harvest is strictly manual and the pressing of whole clusters takes place preventing the contact of oxygen in the air with the must, therefore in an inert atmosphere with nitrogen. Before pressing, dry ice is inserted into the press which, in addition to saturating the atmosphere together with nitrogen, lowers the temperature. The skins macerate with the juice at low temperature, releasing aromatic compounds that will then be preserved and expressed in the wine. After fermentation, Soave DOC Monte Ceriani Tenuta Sant'Antonio remains in contact with the fine lees for a few months before bottling.
