Solaia is a 10-hectare vineyard in the Tignanello estate owned by the Antinori family that produces a great wine, a wine that is the result of a blend mainly of Cabernet Sauvignon, Cabernet Franc, and Sangiovese. In this particular cru called Solaia, due to the special exposure and the extremely poor, rocky, and calcareous soil composition, the Cabernet Sauvignon reaches levels of ripeness rarely achieved in Italian territory with extraordinary results. The harvest of these grapes begins in mid-September with the Cabernet Franc, continues with the Sangiovese, and ends with the Cabernet Sauvignon around mid-October. The clusters are initially selected in the vineyard and brought to the cellar for delicate destemming and manual selection of the berries on a sorting table. Fermentation takes place in temperature-controlled conical tanks, with a duration that varies depending on the vintage and the variety being vinified to achieve the desired balance for all vintages and all grape varieties. Solaia matures in French and Hungarian oak barriques for 18 months during which malolactic fermentation occurs; subsequently, the best barriques are blended and shortly after bottling takes place. Pairings: Solaia Antinori is a dense and full-bodied wine while maintaining a unique elegance. This wine pairs excellently with main courses of red meats and game from tradition, both roasted and stewed, even spiced. It is also excellent paired with very flavorful aged cheeses.
