
Description
Taurasi Feudi di San Gregorio is a wine produced with the principal grape variety of southern Italy: Aglianico. This wine is now considered by many as the Barolo of the south for its importance and elegance. Aglianico is a variety capable of accumulating a large amount of polyphenols in the berry, and having evolved on volcanic soil in Italy, it consistently produces wines that are very savory and mineral, making them unmistakable and highly appreciated. Feudi di San Gregorio places great emphasis on this grape variety, so much so that Aglianico is at the center of research projects involving the Universities of Milan and Naples to study and optimize the expression of this grape. Taurasi is the area where the Aglianico vineyards are located, which give life to this splendid wine. The grapes, harvested manually at perfect phenolic ripeness, are brought to the winery and crushed, placed in temperature-controlled steel containers for alcoholic fermentation. The fermentation with maceration lasts about 3 weeks, during which the musts become wine and are enriched with substances released from the skins and seeds during maceration, such as polyphenols and aromas. The wine is separated from the skins and placed in French oak barriques for 18 months of aging, after which blending and bottling take place. The bottles remain in the cellar for 9 months before being marketed. Pairings: Taurasi Feudi di San Gregorio is a structured red wine of great elegance with very velvety tannins. Excellent when paired with roasted red meats and game, and long-aged non-spicy cheeses.
