Tommasi Ripasso Classico Superiore is a wine that comes from two fermentations and especially two macerations that allow it to enrich in color, aromas, and structure. Ripasso is a typical wine of Valpolicella and Tommasi Ripasso is produced with grapes from the best soils of Valpolicella. The grapes are harvested around the end of September and brought to the cellar for fermentation with maceration lasting about 12 days at a temperature of 25-28°C, resulting in a fresh and pleasant wine. The Ripasso technique consists of "repassing" the Amarone pomace; practically, this pomace is placed in the stainless steel tank containing the future Ripasso, which undergoes refermentation for 12-13 days and thus enriches in coloring substances, aromas, and structure. Subsequently, Tommasi Ripasso Classico Superiore ages for 15 months in Slavonian oak barrels of 65 hl and for 6 months in the bottle. Pairings: Tommasi Ripasso Classico Superiore is an elegant and structured wine, excellent with roasts and braised red meat but also game. Perfect with aged hard cheeses.
