
Description
Bisol Prosecco di Valdobbiadene Crede is a wine produced using the autoclave refermentation technique or Martinotti-Charmat method. The grape used for production is Glera, a variety always cultivated in Valdobbiadene with very aromatic and fruity characteristics. The grapes are hand-harvested around the end of August, gently pressed, and the musts are inoculated with selected yeasts. The alcoholic fermentation takes place in temperature-controlled stainless steel tanks at a temperature of 16-18°C where they remain until blending before refermentation. Once the "base" for refermentation is obtained, this wine is transferred to an autoclave where sugar and yeasts are added, leading to refermentation that lasts about 15-20 days depending on the chosen temperature for the process. Subsequently, all operations are carried out under isobaric conditions to retain the bubbles generated by refermentation, including isobaric transfer, isobaric filtration, and isobaric bottling.
