Vastedda della Valle del Belice DOP is a typical product from the Valle del Belice in Sicily, made with sheep's milk. It is one of the very few sheep's milk cheeses with a stretched curd. Vastedda della Valle del Belice DOP is a cheese without a rind. Like all sheep's milk cheeses, its fat content is not less than 35% on dry matter, while its sodium chloride content does not exceed 5% on dry matter. It has a high protein content because during the curd stretching process, fat is washed away, increasing the amount of protein per equal weight. The artisanal stretching operation requires particular skill due to the low aptitude of sheep's milk to be transformed into stretched curd cheeses. Pairings: it can be used as an ingredient in numerous recipes or consumed pure as a complement to tasty salads. Storage: keep refrigerated. Aging: 25 days.
