Asiago DOP takes its name from the Vicenza plateau, which boasts many high-quality pastures with floral components and fine hay. It is made with cow's milk and is a semi-cooked cheese. It is a typical and ancient cheese whose history dates back to around the year 1000, produced by the Celtic peoples. Asiago DOP d'Allevo is aged for 5-6 months. It has a compact texture, a white color tending towards straw yellow with small to medium-sized holes. It has a strong and milky flavor, particularly sweet and savory.
