A blue cheese with a compact and firm texture, made with only cow's milk from a small dairy in the Piedmont area of Gorgonzola. A delicious semi-cooked cow's milk cheese, blue-veined and aged for 30 to 60 days, and refined with a dip in white wine for at least another month. At first glance, it may look like a Gorgonzola, but it is not.
