
Description
Brunet is a typical Piedmontese goat cheese. The goat milk, which can be of Italian or Spanish origin, is then carefully processed by the master cheesemakers of the Caseificio dell'Alta Langa, whose masterpiece has long been part of the pantheon of local traditional excellence. Brunet: characteristics It is a soft cheese, aged for no more than seven days and made from a few simple, high-quality ingredients: very fresh goat milk, which gives Brunet its characteristic spicy and wild taste, cultures, salt, and rennet. Brunet cheese comes in small cylindrical shapes. The cheese is enclosed in a soft, wrinkled, and malleable rind with a typical straw-yellow hue, delicate and distinctive. The under-rind, without eyes and obtained from light aging, appears as a soft goat milk robiola with a thin whitish rind, with a creamy heart to be enjoyed with a spoon.
