
Redivino is undoubtedly one of the flagship cheeses of Corrado Benedetti. Full-bodied and soft, with an intense taste and enveloping aroma: this quality cheese has much to offer, but its main peculiarity is undoubtedly the aging in Amarone della Valpolicella DOCG.
During the harvest period, the cheese wheels are immersed in the must of Corvina, Rondinella, and Molinara grapes, from which Amarone is derived, and then left to rest for a variable period depending on the weight. Once removed from the vats, they are dried and subjected to a long aging process lasting from six to eight months. The aging of the grapes of this fine wine enhances the cheese by softening its taste and accentuating its body.
