This cheese is made with goat's milk and is aged for at least 45 days. Thanks to the clear air and purity offered by the environment where the goats graze, Toma di Gressoney is rich in interesting organoleptic properties: it has less than 23% fat. It offers a rather high intensity of aroma and floral sensations. Its paste is elastic, light straw-colored, and with sparse but regularly distributed eyes.
