Garganega for Soave is instead a native grape typical of the Verona area, the most well-known, the most cultivated. With the two wines and their pomace, the cow's milk cheese is aged using the same technique as Monte Veronese DOP.
It has an aging period of 8 to 19 months. The resting in the pomace and wines implies an absorption that penetrates centripetally towards the center of the cheese, giving it typical organoleptic characteristics.
