La Casara is located at the foot of the Lessini Mountains among the highest hills of the Durello DOC and Soave DOC denomination. White grapes for white wines. The first is produced with Durella grapes, which were once called rabiosa or cagnina precisely because of their acidity. Garganega for Soave is instead a native grape typical of the Verona area, the most well-known, the most cultivated. With the two wines and their pomace, the cow's milk cheese is aged using the same technique as Monte Veronese DOP. It has an aging period of 8 to 19 months. The resting in the pomace and wines implies an absorption that penetrates centripetally towards the center of the cheese, giving it typical organoleptic characteristics.
