Cultivation area The "299" originates from the vineyards of the Forti del Vento company, located in Alto Monferrato, Piedmont. The vines are situated at about 250 meters above sea level, on calcareous marl-clay soils, perfect for enhancing the qualities of Dolcetto. Cultivation practices The company follows the principles of biodynamic agriculture, promoting biodiversity and minimizing environmental impact. In the cellar, fermentations occur spontaneously thanks to indigenous yeasts, without the addition of sulfites or clarifications or filtrations, to preserve the authenticity of the wine. Technical characteristics Grape variety: 100% Dolcetto Denomination: Organic Rosé Wine Vinification: Spontaneous fermentation in terracotta amphorae, with white vinification to enhance freshness and finesse. Aging: 2 months in amphora, followed by maturation in stainless steel until spring and one month of bottle aging. Production: Limited to about 1,500 bottles per year.
