Denomination: Chianti Rufina DOCG Grape Variety: Sangiovese, Canaiolo Nero, Ciliegiolo Name: Cedro Alcohol: 13.5° Volume: 0.75L Production Area: Pontassieve (FI), Tuscany, Italy Description: Hand-harvested in crates, fermentation and maceration occur at controlled temperature in steel for about 10 days, with numerous pump-overs. Aging is done in 35 hl oak barrels for about 12 months, then in the bottle for at least 6 months. The color is intense and bright ruby red. On the nose, notes of undergrowth and small wild berries are perceived, the bouquet is accompanied by notes of dried rose and violet. In the mouth, notes of moderately toasted spices and leather give a sense of fullness. The taste is dry, savory, but with soft and compact tannins. The finish is of good persistence with a nice acidity that characterizes the Rufina area. It is a fresh and balanced wine with smooth tannins, a wine to share or offer on special occasions. Recommended pairing throughout the meal when young, when mature it prefers to accompany meat sauces, poultry, and roasts. Serving temperature 16-18°C.
