After manual selection of the grapes in early October, the grapes are crushed on the same evening of harvesting and placed in tanks for fermentation. The wine is then introduced into 25HL French oak barrels for about 18 months of aging. The wine completes its maturation with approximately 12 months of bottle aging. Broad and complex. The sensations are floral, with notes of rose and withered violet, raspberries and cherry jam, spicy, chocolate, cloves, black pepper, and nutmeg. Ruby red color tending to garnet with aging. On the palate, it is dry due to the presence of generous tannins softened by aging in wood. To pair with tajarin with game ragù, roast hazelnuts, or braised meat in wine.
