Denomination: Gavi del Comune di Gavi DOCG Grape variety: 100% Cortese Name: Gavi Alcohol: 12.5° Format: 0.75L Production area: Scapaccino (AT), Piedmont, Italy The grapes are pressed on the evening of the harvest and then placed in stainless steel tanks. Alcoholic fermentation begins at a temperature of 15-16°C to preserve the delicate aromas. This is followed by a short aging on fine lees in steel until bottling, which generally takes place at the end of spring. This wine combines freshness with good structure and complexity. It has a fine bouquet of good intensity and persistence, offering slightly floral aromas. Straw yellow color. On the palate, it is fresh, graceful, and well-structured. Recommended pairing: risotto with chard ribs, tempura of squid tentacles and crispy potatoes, or chicken scaloppine with wine.
