Denomination: Trentino DOC Superiore Valle di Cembra Grape Variety: 100% Pinot Noir Name: Sagum Pinot Noir Alcohol: 13.5° Volume: 0.75L Production Area: Giove (TN), Trentino-Alto Adige, Italy Description: Manual harvesting of the grapes at the end of September, cold pre-fermentation maceration for one week followed by spontaneous alcoholic fermentation, then further maceration and daily manual punch-downs. Malolactic fermentation in barriques and tonneaux, where it then ages for about 18 months. This is followed by a long aging in the bottle. Ruby color with slight garnet hues. On the nose, notes of fruit in alcohol, blackberries, licorice, raspberry, currant, cherry. Followed by toasted notes, a slight balsamic hint, and spices (black pepper, clove). On the palate, dry, with the right acidity and sapidity, silky and velvety tannins with a pleasant return of fruit; well-represented spices, a slight balsamic note, and quinine in the finish. Fine and elegant.
