Cultivation: Champagne Viellard-Millot is a family business, now in its 6th generation, with its vineyards located near the village of Ambonnay. The properties cover 2.23 hectares, consisting of 9 plots, managed with sustainable viticulture practices and without the use of insecticides. The winemaking and sparkling processes are carried out at the Centre Vinicole d’Ambonnay, and all the cuvées produced are labeled with the Grand Cru designation, ensuring extraordinary quality through patience and respect for tradition. In the cellar: manual harvesting, pressing for 85% first press juice (the cuvée) and 15% of the subsequent press (the taille); vinification and aging in steel, before bottling, for the base vintage (2016; 60%) and for most of the reserve wine (15 vintages "en réserve perpétuelle," of which 10% is aged in barrels). Malolactic conversion is completed and the wine remains on the lees in the bottle for at least 48 months. Disgorgement is carried out at least 6 months before release. Characteristics: yellow in color with golden reflections, the nose reveals toasted notes, biscuit, and pastry, with hints of ripe grain. The Chardonnay seems to dominate with its lovely freshness. On the palate, it is rich and energetic, with a nice match to the aromatic traits. Pairings: champagne for all occasions, ideal as an aperitif or paired with melted cheese, grilled fish or carpaccio, and seafood in general.
