Cervaro della Sala is a fine white wine produced with Chardonnay grapes and a small part of Grechetto. It was among the first Italian whites to undergo malolactic fermentation and aging in barrique, acquiring a great capacity for evolution over time. It has a pale straw yellow color with slight greenish reflections, and a complex bouquet of citrus, fruits, and white flowers; on the palate, it is savory and mineral, with great structure and persistence. In fact, it was one of the first Italian white wines to be fermented and aged in barrique. The renowned winemaker Renzo Cotarella produced the first vintage of this great wine in 1985 with Chardonnay grapes, aiming to create a white wine suitable for long aging. And the experiment was perfectly successful. The 2018 vintage was born in Umbria from Chardonnay grapes with a small part of Grechetto harvested between late August and the first half of September. The Chardonnay undergoes alcoholic and malolactic fermentation in barrique and then ages for another 5 months, at the end of which it is blended with 10% of Grechetto that instead ferments in stainless steel. It spends another 12 months in bottle before being marketed.
