Cervaro della Sala is a fine white wine produced with Chardonnay grapes and a small portion of Grechetto. It was among the first Italian white wines to undergo malolactic fermentation and aging in barrique, gaining great aging potential. Pale straw yellow in color with slight greenish reflections, it has a complex bouquet of citrus, fruits, and white flowers; on the palate it is savory and mineral, with great structure and persistence. The famous winemaker Renzo Cotarella produced the first vintage of this wine in 1985 with the idea of creating a white wine suitable for long aging. The 2018 vintage is born in Umbria from Chardonnay grapes with a small portion of Grechetto harvested between late August and mid-September. The Chardonnay undergoes alcoholic and malolactic fermentation in barrique, then ages for another 5 months, after which it is blended with 10% Grechetto that ferments in steel. It then spends 12 months in the bottle before being marketed.
