Cervaro della Sala is a fine white wine produced with Chardonnay grapes and a small portion of Grechetto. It was among the first Italian whites to undergo malolactic fermentation and aging in barrique, gaining a great ability to evolve over time. Pale straw yellow in color with slight greenish reflections, it has a complex bouquet of citrus, fruit, and white flowers; on the palate, it is savory and mineral, with great structure and persistence.
