Vinsanto Doc Toscano Vin Santo del Chianti by Ruffino, produced by drying Trebbiano and Malvasia grapes in the evocative vinsantaia of Gretole. The bunches from which the vin santo originates are dried very slowly in the vinsantaia, selected and vinified in the first days of December. The pressing of the dried bunches was carried out with delicate and long cycles. The must obtained, dense due to the high concentration of sugars, was transferred to 225-liter oak barrels and fermented in a temperature-controlled environment at 18°C. When the right balance between alcohol and residual sugars was reached around mid-January, fermentation was stopped. After racking, the vinsanto was transferred to oak barrels where it remained to age for about 3 years.
