The grape clusters from which vin santo originates are slowly dried in the vinsantaia, selected, and vinified in the early days of December. The pressing of the dried grapes was carried out with delicate and long cycles. The must thus obtained, dense due to the high concentration of sugars, was transferred to 225-liter oak barrels and fermented in a temperature-controlled environment at 18°C. Around mid-January, once the right balance between alcohol and residual sugars was achieved, the fermentation was stopped.
