
Blu del Moncenisio d'alpeggio is a blue-veined cheese made from raw alpine cow's milk, aged for 28 to 60 days in caves and produced on the Moncenisio plateau, the alpine pass of the Cottian Alps that divides Italy from France.
With a compact and melting texture, sparse eyes, ivory white color, very tasty and pleasant. Blu del Moncenisio is cylindrical in shape, with a thin, dry rind covered with a sparse white-grayish mold.
