Acetaia Guerzoni has always used only organic and biodynamic grapes since its inception, making its balsamic vinegar unique. This vinegar is produced by aging only acetified cooked must, contained in barrels that differ in type of wood and size. In the company, each barrel is associated with a planet of the solar system according to a biodynamic scheme: Moon (cherry), Venus (acacia), Mercury (mulberry), Sun (ash), Mars (sessile oak or oak), Jupiter (maple or chestnut), Saturn (juniper or chestnut). This particular maturation process, which can last up to 24 years, gives the vinegar unmistakable properties and aromas. Before being bottled, the vinegar undergoes rigorous checks by the Tasting Commission at the Chamber of Commerce of Modena, which assess density, acidity, and organoleptic characteristics. Only after passing these checks can the vinegar bear the name Traditional Balsamic Vinegar of Modena. Furthermore, to further ensure the consumer, the Producers Consortium handles the bottling of the batch within the same Chamber of Commerce.
