Gorna | Boniviri Description White wine from native Sicilian white grape variety. Composed of 60% Carricante and 80% Etna Bianco Superiore D.O.C. Grape variety: Carricante Age of the vineyards: from 15 to 60 years Ripening and harvest: in October, depending on climatic conditions with manual harvesting Vinification and maturation method: the grapes are destemmed and pressed with gentle pressing. Fermentation takes place at a temperature of 18-20°C. It remains to refine in steel silos for another 8 months. Aging: in bottle for at least four months. Harvest: 2019 Producers This Etna White D.O.C by Boniviri is produced by Giovanni, a Boniviri grower and owner of the Eudes winery. Located in the southeastern part of Etna, its vineyards develop on the slopes of Mount Gorna, in volcanic soil but also exposed to the sea. Product The Gorna presents itself with a straw yellow color and a delicate aroma with hints of white fruit. On the palate, it is dry, with high minerality, deriving from the volcanic soil in which the vineyard is located. It is possible to taste good acidity and fruity sensations, especially of apple, orange blossom, and anise. A wine that can be refined in steel to enhance its freshness, but also endowed with good structure and, therefore, capable of aging gracefully for up to ten years.
