Preparation

Clean the prickly pear pads by scraping off the spines with a knife and rinse them under running water.

Boil the pads in a pot with water for about 5 minutes over medium heat, then drain and let them cool on absorbent paper.

Season the tomato sauce with extra virgin olive oil and salt.

In a baking dish, spread a layer of tomato sauce, place a prickly pear pad, and season with sauce, Parmesan, and mozzarella.
