Prepare the burgers: In a large bowl, mix the ground beef with paprika, cumin, chili, salt, and pepper. Form 4 even burgers and let them rest in the refrigerator for at least 15 minutes.
Prepare the sauce: In another bowl, combine the diced mango with grapefruit juice and pulp, chopped spring onion, fresh chili (optional), coriander, extra virgin olive oil, and salt. Mix well and let rest in the refrigerator to blend the flavors.
Cooking the burgers: Heat a grill or non-stick pan well and cook the burgers for 4-5 minutes per side or to the desired doneness. Just before finishing cooking, also heat the buns on the grill to make them slightly crispy.
Assembly: On the base of the bun, place a lettuce leaf, the hot burger, add a generous spoonful of mango and grapefruit sauce, and top with a few thin slices of red onion.
