Prepare the hamburgers: In a large bowl, mix the ground meat with paprika, cumin, chili, salt, and pepper. Shape 4 uniform hamburgers and let them rest in the refrigerator for at least 15 minutes.
Prepare the sauce: In another bowl, combine diced mango with grapefruit juice and pulp, chopped green onion, fresh chili (optional), cilantro, EVO oil, and salt. Mix well and let it rest in the refrigerator to meld the flavors.
Cooking the hamburgers: Heat a grill or non-stick pan well and cook the hamburgers for 4-5 minutes on each side or according to desired doneness. Just before finishing cooking, toast the buns on the grill to make them slightly crispy.
Assembly: On the bottom of the bun, place a leaf of lettuce, the hot hamburger, add a generous spoonful of mango and grapefruit sauce, and top with a few thin slices of red onion.
