

Quick recipe for gnocchi made from a mix of flours (chestnuts, sorghum, and Legù blend). Quick to prepare: the mix is cooked in milk (plant-based drink), worked into logs, cut into pieces, and sautéed in oil with vegetables to taste.





Heat the plant-based drink in a saucepan with a pinch of salt and a grating of nutmeg.
When the liquid boils, add the flour mix (chestnuts, sorghum, and Legù blend) and mix vigorously for 2 minutes until you get a homogeneous dough.
Let the dough cool until it is workable.
Shape into logs with your hands and cut them into 1–2 cm pieces to get the gnocchi.
Heat a drizzle of extra virgin olive oil in a pan and sauté the gnocchi until golden on all sides.
Add vegetables of your choice (previously sautéed or cooked) and season with salt and pepper to taste.
Serve the gnocchi warm.
