
A light sweet and sour vinaigrette ideal for protein salads (with tuna, chickpeas or other). Sweetness from agave syrup, balanced flavor with apple cider vinegar or lemon juice and a hint of mustard. Lactose-free and suitable for anti-bloating diets if simple ingredients are used.


In a small bowl, combine 1 teaspoon of agave syrup with 1 teaspoon of apple cider vinegar or lemon juice.
Add 1 teaspoon of mustard and a pinch of salt, stirring to emulsify.
Gradually pour in 2 teaspoons of extra virgin olive oil while continuing to mix until a homogeneous sauce is obtained.
Taste and adjust: add more vinegar/lemon for acidity, more agave for sweetness or more mustard for spiciness.
Dress the protein salad (tuna or chickpeas) and crunchy vegetables with the dressing and serve immediately.
