Creamed cucumbers are a simple and refreshing side dish typical of Italian cuisine. The cucumbers are cut into thin slices and then sautéed in a pan with butter and cream. The result is a delicate and creamy dish, perfect to accompany other courses. This side dish is ideal for summer, when cucumbers are in season and their fresh, crunchy taste pairs perfectly with the light creaminess of the cream.

Peel the cucumbers
Using an appropriate utensil, scoop out many small balls
Blanch them in boiling salted water for a few minutes
Drain them and toss them in a pan where you have melted the butter over low heat
Let them absorb the flavor, stir, adjust the salt and cook for 15 minutes
Pour in the cream, let it be absorbed, transfer to a serving plate and serve immediately
