

Novellame fritters are a delicious appetizer typical of Italian cuisine. They are made with anchovies, fresh eggs and cheese, then fried until golden. Crispy on the outside and soft inside, they are perfect to enjoy hot.
Rinse and dry the deboned anchovies
Heat a generous amount of oil with one knob of butter
In a separate bowl beat the eggs with the two types of grated cheese
Mix in the young anchovy meat
Take the mixture with a spoon and fry over low heat
Remove the cooked fritters and eat them hot
