

Pasta with Taleggio and saffron is a creamy and tasty first course. The Taleggio, with its intense flavor, and the mascarpone that makes it even creamier, blend perfectly with the unique taste of saffron. While the pasta cooks, put the broth in a small saucepan over the heat
Bring it to a boil for a few minutes and then add the saffron
When the saffron is dissolved, also add the Taleggio cut into cubes and let it melt without letting it boil (otherwise it will form lumps)
At this point the pasta is ready to be drained
If there are two of you, one drains the pasta and the other puts the mascarpone into the saucepan and melts it
The pasta should be dressed immediately and eaten immediately
If the cheese cream is too runny, add some Grana to bind it
Since the dish is rather light, prepare slightly small portions of pasta
