Pasta with Taleggio and saffron is a creamy and tasty first course. While the pasta is cooking, put the broth on the stove in a small pot
Let it boil for a few minutes and then add the saffron
When the saffron is dissolved, add the Taleggio cut into cubes and let it melt without letting it boil (otherwise it will clump)
At this point, the pasta is ready to be drained
If there are two of you, one can drain the pasta while the other adds the mascarpone to the pot and melts it
The pasta should be dressed immediately and eaten immediately
If the cheese sauce is too liquid, add the Grana to thicken it
Since the dish is quite light, prepare slightly smaller portions of pasta
