Prawns with arugula is a delicious seafood appetizer, fresh and delicately flavored. The arugula adds a touch of freshness and lightness to the prawns, while the lemon provides a note of acidity that perfectly balances the flavors. This dish is perfect to start a fish-based meal or as a tasty appetizer. Prawns with arugula is an excellent alternative to the classic steamed or gratin prawns. Try them and let yourself be won over by their flavor!
Wash and dry the arugula well, then place it on the bottom of the serving dish
Shell the prawns, remove the dark part, take out the flesh and set aside the coral
Place the flesh in the steamer basket, put it on the stove over moderate heat, and cook for 4 minutes
Meanwhile, squeeze the lemon, strain the juice through a sieve, and then emulsify it with the oil and a pinch of salt by whisking the mixture with a small whisk
Then lay the prawns on the bed of arugula, garnish them with the coral, and drizzle the lemon sauce over them
Serve the prawns while still warm
