
Prawns with arugula are a delicious seafood starter, fresh and with a delicate flavor. Wash and dry the arugula well and arrange it on the bottom of the serving plate
Peel the prawns, remove the dark vein, take out the flesh and set aside the coral (roe)
Place the flesh in the steamer basket, set over medium heat and cook for 4 minutes
Meanwhile, squeeze the lemon, strain the juice through a sieve and then emulsify it with the oil and a pinch of salt by whisking the mixture with a small whisk
Then lay the crustaceans on the bed of arugula, garnish with the coral (roe) and drizzle the lemon sauce over them
Serve the prawns still warm
