Small gems of semolina handcrafted, perfect for soups and broths, but also for dry dishes with seasonal vegetables, shellfish, or local aromatic herbs. Thanks to their texture, they absorb flavors and pair perfectly with Sicilian culinary traditions. Artisan agricultural pasta made from Semolina of Ancient Russello Wheat. Tre di Oro pasta is born in the fields of Contrada Quartarella, in the heart of Val di Noto, where ancient Russello wheat is carefully cultivated respecting the land and the biodiversity of the Iblei Mountains. Here, among limestone soils and Mediterranean breezes, the wheat grows following natural cycles, without forcing, preserving its authenticity and nutritional value. Our approach to cultivation is based on organic regenerative agricultural systems and we are in organic conversion.
