

Primitivo grapes Yield 80 Q.li/Ha. Vineyard locations situated in the agro of Apricena (Fg) at the foot of the Gargano, take root in limestone soils rich in minerals, with a Southwest exposure. Manual Harvest. Vinification: Vinified in steel at controlled temperature (25°C), the maceration lasts 15 days, favoring maximum dissolution of the polyphenolic component. Maturation: Aging for 12 months in new French oak barriques, and a subsequent resting of 3 months in the bottle. Alcohol: Alcohol 14% Vol. Variable by vintage. Organoleptic notes: Wine of intense ruby red color with purplish reflections. On the nose it presents intense and persistent, fine, immediately surprising for the richness of its red fruits and small berries, accompanied by a pleasant spicy background obtained from oak and that typical of the grapes. On the palate it is rich, warm, deep, with enveloping fruity aromas, good tannic texture and balanced freshness, finishing with great persistence. Serving temperature: 16/18°C. Recommended pairings: Pairs well with many meat-based dishes, roasts and ragù, braised meats, game and aged cheeses.
