

"La Tesa" is the authentic expression of the ancient wine of Valpolicella, Recioto. This ruby red nectar, sweet and spicy, has always delighted the tables of winemakers and noble salons in Verona. Its name derives from the word "recia," the Veronese dialect for "ear," as it refers to the higher lobes of the bunch that contain grapes with a higher concentration of juice and sugars. Recioto has always been the luxury wine of Valpolicella, recognized by the inhabitants of the region and the Veronese as an authentic expression of quality and joy of living. Format: 500ml. Serving temperature: 14 – 16° C. Alcohol content: 12.5%. Technical sheet: DESIGNATION: Recioto della Valpolicella d.o.c.g. PRODUCTION AREA: Negrar Valley, classic Valpolicella. GRAPES: 2.5 kg of dried grapes until about mid-January (Gentle Corvina, Grossa Corvina, Rondinella, Molinara). HARVEST: by hand in the second half of September with grapes placed in crates. The grapes are subject to drying until about mid-January. CRUSHING: in January, after selection of the bunches, a soft crushing is performed. FERMENTATION: vinification in stainless steel at controlled temperature and contact with the skins for about 40 days, with manual crushing. AGING: Fermentation in steel, followed by 18/24 months in large Slavonian oak barrels. At least 12 months in the bottle before sale. ORGANOLEPTIC CHARACTERISTICS: Recioto La Tesa offers a sweet, dry, rich, and succulent flavor, representing the peak of the winemaking tradition of Valpolicella. It has a very deep purple-red color, an intense aroma of cherry with light and well-integrated notes of berries and raspberry. The entrance on the palate is voluptuous and velvety, with a savory and salty note that supports the drinkability of the wine. The sensation of aromatic black pepper prevails along with a sweet note of nutmeg. The black forest fruit and dried plum prevail with noble elegance and firm persistence.
