
La Casara is located at the foot of the Lessini Mountains among the highest hills of the Durello DOC and Soave DOC designation. White grapes for white wines. The first is produced with Durella grapes which were once called rabiosa or cagnina precisely for its acidity. Garganega for Soave is instead an indigenous variety typical of the Veronese area, the most well-known, the most cultivated. With the two wines and their pomace, it is used to age the cow's milk cheese produced with the same technique as Monte Veronese DOP. It has a maturation period of 8 to 19 months. The aging in the pomace and wines involves an absorption that penetrates centrifugally towards the center of the cheese, giving it typical organoleptic characteristics.
