The Mantuan Salami from Salumificio Pedrazzoli is a product made from mature pork meat and fat, flavored with salt, pepper, fresh garlic, and cloves. For its production, meat from a single animal is used. The Mantuan Salami is a salami traditionally produced throughout the province of Mantova since the times of the Etruscans; its spread was made possible thanks to the Gonzaga dynasty, which made extensive use of this delicious food. Its production involves grinding to "coarse grind", adding garlic and pepper. The mixture is then blended and stuffed into a natural casing and left to dry for about 7 days. The resulting salami is a "strawberry" red color; the texture is soft and its flavor is balanced. The aroma is intense and clean, with slight hints of fermentation and aging processes.
