Morlacco is a cheese typical of the Veneto region and in particular of the pastures of Monte Grappa. This peak, which became famous for the heroic events of the Great War, since the time of the Republic of Venice, had seen the settlement of Balkan peoples, shepherds, and lumberjacks, who began to produce a simple cheese here that took its name directly from the region of their origin: Morlachia. It is a cheese made from raw semi-skimmed cow's milk and from a rennet coagulation. For this reason, its aroma is so intense and its consistency particularly elastic with a consistent eye formation.
