Morlacco is a cheese typically from the Veneto region and in particular from the pastures of Monte Grappa. This peak became famous for the heroic events of the Great War; since the time of the Republic of the Serenissima, it had seen the settlement of Balkan peoples, shepherds, and woodcutters, who began to produce a simple cheese that took its name from the region of their origin: Morlachia. It is a cheese made from raw semi-skimmed cow's milk and rennet coagulation. For this reason, its aroma is so intense and its texture particularly elastic with a consistent eye structure.
