Born from the continuous experimentation following the splendid mistake of Walter Ceradini that led to the birth, first of all, of Vinappeso Isabella, the Vinappesino is a treasure chest of aromas and fragrances. The essence of Vinappeso encapsulated in a new and unprecedented shape, the Vinappesino indeed. Over the years, the Vinappeso of Valpolicella has managed to win over many chefs, both local and international, giving the Vigneto dei Salumi the opportunity to continue experimenting with these chefs in all kinds of pairings. In fact, Vinappesino is nothing more than Vinappeso cut into matchsticks. Vinappesino originates from the heart of the Italian heavy pork leg that is then aged for about 28-30 months in the cellar before being refined for about 3 or 4 months immersed in Amarone and Recioto della Valpolicella. After undergoing the magical transformation process of double refinement, Vinappesino is finally cut by hand into small and thin strips and packaged in packs of 100g.
