Salicornia, also known as "sea asparagus," is a plant that grows by the sea, on rocks, or near saltwater pools. This particular variety grows in Gargano and is traditionally preserved in extra virgin olive oil by the Buondioli family. It is an excellent ingredient in salads or in first and second courses, especially those based on fish. A tip: due to its salty contribution, remember to minimize or completely avoid adding salt.
